Why you must eat itIsland tofu long steeped and fermented in red koji and awamori mash, a delicacy of the Ryukyu court. Its surface is dense and firm, stained crimson. Take a mere sliver on a toothpick tip and taste it as if licking. Salt, savour and awamori scent run deep, a flavour like cheese or fermented bean curd lingering on the tongue. Served as a medicinal food in court days, it is still held the finest companion to awamori.

Tofuyo is a fermented food that learned from Chinese fermented curd yet developed on its own in Ryukyu, its curing taking months. Rich in taste and scent, it is best savoured slowly in small amounts. It is served at Shuri's Ryukyu restaurants and awamori shops. Prices and hours are a guide, so check on site.
