Why you must eat itA tea peculiar to Ryukyu: roasted-rice water and tea whipped in a large bowl, the heaped white foam lifted into a cup to drink. The foam rises only from hard water and roasted-rice broth, dusted on top with peanut powder or a small rice cake. Sipped, the foam is toasty and light, drunk slowly with the tea beneath. Loved as women's socialising in court days, it is now tasted at Shuri's old-house tea rooms. On the stone-paved castle town, a cup where the flow of time slackens once.

Bukubuku-cha whips foam using hard water and the broth of roasted rice, a tea manner handed down on the Okinawa main island. Holding the foam takes skill, and old-house cafes and tea rooms around Shuri serve it specially. It usually comes with a sweet. Prices and hours are a guide, so check on site.
