×Shuri Soba (wood-ash noodles)

Why you must eat itA soba of an old Shuri method, its wheat kneaded with the clear water drawn off burned wood ash. Unlike ordinary Okinawa soba made with alkaline water, the noodle is flatter, smooth to the throat and faintly fragrant. The broth of pork and bonito is clear and light, dressed plainly with three-layer pork, fish cake and scallion. At the famed shops below the castle it often sells out past midday. Mokkai soba uses the clear water off ash from burned wood such as banyan, a laborious traditional way, so few shops make it. Shuri has long-running famed shops, mostly open from morning to early afternoon. Queues are common, so allow time. Prices and hours are a guide, so check on site.
