Why you must eat itThick wheat noodles, despite the name using no buckwheat, in a clear broth of bonito and pork bone. On top sit three-layer pork belly, fish cake, pickled ginger and scallion. The noodles have a firm spring from the alkaline water. A few drops of koregusu, island chili steeped in awamori from the table jar, tighten the broth. Have a bowl before heading into the street.

Okinawa soba is the island's most everyday bowl, and the noodle gauge and broth differ from shop to shop. Besides pork belly there is soki soba with spare ribs and tebichi soba with trotter. Specialist shops dot the Kokusai-dori area. Prices and hours are a guide, so check on the spot.
