Why you must eat itA ball of dough of flour, egg and sugar, fried slowly in oil. The surface splits open, crisp outside and dense within. Fresh from the oil it is hot, its sweetness plain and lingering. Beyond plain there is brown-sugar and purple-yam dough. Take it in a paper bag and eat as you walk, before it cools.
Sata andagi means "fried sugar," a signature Okinawan sweet made at home for celebrations and as an everyday tea snack. It is sold by the piece at market and arcade sweet shops and stalls. One is large, so share if you like. Prices and hours are a guide, so check on site.
