Why you must eat itScooped from a wooden tub, the tofu pudding is smoother than silk and dissolves without leaving an edge. Eaten with a drizzle of brown-sugar syrup, or syrup alone. It comes hot or cold, deep with the scent of soybean. The same shop's soy milk and stuffed fried tofu are signatures too.

A Sham Shui Po tofu house said to date from 1893. From stone-ground soybeans it makes tofu, soy milk and tofu pudding by hand, sustaining the daily life of the old quarter for over a century. Sham Shui Po is one of Hong Kong's old working-class districts, where cheap, honest food gathers — and this shop is something of its emblem.
