Why you must eat itWhite congee cooked until the grains have wholly dissolved, then fish, beef or offal dropped in to order and simmered fast. It is smooth and even, and lifts off the spoon without a thread. Served with chopped scallion and ginger and a length of fried dough. Sipped hot, it goes right through you — a bowl for morning or the small hours.

A celebrated congee shop inside a Sham Shui Po cooked-food centre. Sang gwan juk is Cantonese congee where raw ingredients are dropped into a base porridge and cooked on the spot. It sits in a humble canteen on an upper floor, where you eat among locals. Being inside a market building, you climb the stairs by the sign.
