Why you must eat itA bun baked with a sweet, cracked topping, split hot from the oven with a cold slab of butter inside. There is no pineapple — the name comes from the crust's cracks resembling the fruit's skin. The hot bun half-melting the butter, bitten with a silk-stocking tea, is a Hong Kong morning.

The pineapple bun is a staple of Hong Kong bakeries and cha chaan teng; with a cold slab of butter inside it becomes bo lo yau. Sham Shui Po keeps many old, locally rooted cha chaan teng — bread and milk tea in the morning, siu mei rice and instant noodles at noon, the neighbourhood gathering. The buns bake in the morning and can sell out.
