Why you must eat itRice batter steamed thin and rolled, the cheung fun snipped into bite-sized pieces with scissors. Served under three sauces — sweet, sesame and chili — and a scatter of sesame. A slippery texture caught up in the sweetness of the sauce and the fragrance of sesame. Plain and unfilled, a morning plate the locals buy one after another.

A street-level snack shop in Sham Shui Po, on the Michelin Bib Gourmand for its cheung fun. Hong Kong cheung fun comes two ways — the filled kind served at yum cha, and this plain street plate. Most take it in a foam box and eat standing at the shopfront or on the move.
