Cha Ca La Vong
×Cha Ca (Turmeric Grilled Fish)
Chả Cá Lã Vọng × Chả Cá
Why you must eat itWhite fish dyed gold with turmeric sizzles in a small iron pan at the table. You throw in fistfuls of dill and scallion yourself, and the aroma rises in the fat. Into a bowl of boiled rice vermicelli lay the fish and herbs, scatter roasted peanuts, and add a touch of fermented shrimp paste (mam tom) or fish sauce. The sweetness of scallion, the coolness of dill, and the fish's fat become one. The dish even gave the street its name; you sit and eat with your hands at work.
Cha ca is river fish cooked with turmeric and dill, finished by the guest at the table. La Vong is the name of the old house known for it, and the street took its name too. It costs more than other dishes, and a single portion is ample. Prices and hours are a guide. Mam tom is pungent, so choose fish sauce if it is new to you. Sharing among a few is comfortable.
