Why you must eat itCharcoal-grilled pork patties and belly arrive floating in a sweet-sour dip of fish sauce, lime, sugar, and green papaya. On a separate plate are cool rice vermicelli, bun, and a heap of herbs. Pinch some noodles into the dip and lift them with the meat and herbs together. The dip is warm, fat and sourness touching the tongue by turns. Add garlic and chili to taste, or crumble a fried spring roll into it. Busy at midday, it is a face of Hanoi lunch.

Bun cha is charcoal-grilled pork eaten in a sweet-sour dip, served mainly at midday. The Hang Manh shop has long been known and often comes with fried spring rolls (nem). Prices and hours are a guide, and some shops sell out of meat by early afternoon. Leave the herbs if they are not for you, and adjust the heat yourself with chili.
