Hakata Izakaya

×Goma Saba

Why you must eat itFresh mackerel sliced thin and dressed with ground sesame, a soy tare, and mirin, served as sashimi. Kyushu keeps the habit of eating mackerel raw; the flesh is firm and full of fat. With onion, shiso, and wasabi, it is also good laid a little at a time over warm rice. At izakaya it is ordered as a small opening plate and goes well with drink. Freshness is everything, and the better the handling, the more the flesh shines.

Goma saba is a raw mackerel dish enjoyed in Fukuoka, often made with fish from the Genkai Sea. Mackerel spoils easily, and serving it raw depends on careful handling of freshness. Depending on the catch, some days it cannot be served. Prices are a per-plate guide; check whether the fish is available that day with the shop.
