Why you must eat itA kind of Chongqing xiaomian: springy alkaline noodles topped with stewed-soft peas and a fried pork-and-bean sauce (zajiang). Stir it all together at the table first. Choose soupy (tangmian) or dry (ganliu); dry lets the chili oil and Sichuan pepper hit straight. Ask for mild, medium or hot, and add greens if you like. Many people eat it for breakfast.

A noted wanza-noodle shop on Qingnian Road. Nearly every lane in Chongqing has its own xiaomian stall, and wanza — peas plus pork-bean sauce — is the emblem, every house tuning its chili oil and pepper differently. You share a table on a low round stool, hand over a ticket and wait for your number. Noodles are boiled to order, so the tables turn fast at busy hours.
