Why you must eat itTranslucent thick noodles of sweet-potato starch, eaten in a red broth sharp with vinegar and chili oil. The noodles are slippery and snap cleanly, scattered with crushed fried peanuts, soybeans and coriander. As the name says, sour and hot rise together; add more vinegar at the end if you like it sharp. It has several branches on Bayi Food Street, all with queues, served in a paper bowl you can carry as you walk.
The signature hot-and-sour noodle stand of Jiefangbei's Bayi Food Street, so popular that several branches line the hundred-metre lane. Chongqing's version tends hotter and more numbing than Chengdu's. Take a number at the order window, collect your paper bowl at the pickup. The street also holds xiaomian, wontons, sticky-rice cakes and mini tangyuan — perfect for grazing a little at a time.
