Why you must eat itChaoshou are the Sichuan-Chongqing wonton — thin skins around a pork filling, served in a "laoma" broth heavy with Sichuan pepper. The first sip numbs the tongue, and the heat catches up a beat later. The numbing is set by the amount of pepper: light, medium or heavy. The skins are thin and slippery, the filling small. Lighter than noodles, it sits well before or after hotpot.

A wonton shop on Bayi Food Street whose signature, as "laoma" says, puts the pepper's numbness up front. Chaoshou are eaten at breakfast and late at night in Chongqing; some shops let you choose clear broth or chili oil, but here mala is the default. Hand over a ticket, share a table and wait — the look of a proper street stall.
