Why you must eat itA white, pudding-like cake of milled, cooked rice set cold, drizzled generously with brown-sugar syrup. Cool and softly collapsing, its only sweetness the depth of the sugar. It quietly cools a mouth worn by a run of spice. Denser than bingfen — chewy and heavier. In summer Chengdu, an indispensable cold sweet to close out skewers or hotpot.

Liang gao is originally a summer sweet from around Yibin, but is sold widely at Chengdu's stalls and snack shops too. Plain brown-sugar syrup is the base, with some shops adding soybean flour or sesame. Kept chilled ready-made, it comes out the moment you order. One of summer's three great cold sweets alongside bingfen and liangxia, it plays the "rest" that breaks the run of heat.
