Why you must eat itThin noodles tossed dry with fried pork mince, preserved yacai greens, chili oil, Sichuan pepper and sesame paste. Stir the sauce up from the bottom before eating. The first mouthful is toasted sesame, then heat and the pepper's numbness and the salt of the greens layer in. The bowl is small; the name comes from the carrying pole (dan) once used to sell it street to street.
Dandan mian is an emblematic Sichuan noodle, and the old Chengdu form is dry with a strong sesame paste. Found at Yulin and street-corner snack shops, the heat is usually adjustable. Being a small portion, it is typically ordered alongside tianshui or wontons. The name was born in Zigong and spread in Chengdu. The balance of sesame fragrance and numbness is the heart of the bowl.
