Why you must eat itChengdu hotpot: ingredients dipped in a red broth charged with chili and Sichuan pepper. A split "mandarin-duck" pot lets you take half spicy red, half mild clear. Chengdu's red broth is less tallow-heavy than Chongqing's, its fragrance of pepper and layered heat the strength. Tripe and duck intestine for seconds, greens and tofu skin longer. An oil dish softens the heat.
Shu Jiu Xiang is a popular Chengdu hotpot chain with a Yulin branch. Where Chongqing eats with an oil dish of sesame and garlic, Chengdu shops may use mashed garlic or a dry dish of chili powder — leaning toward the pepper's fragrance. The heat is chosen when ordering; for a first time, "mild" or a split pot is safe. The larger the group, the more you can try.
