Why you must eat itGlutinous rice and dates, sometimes with kidney beans, are layered many times over and steamed for hours in a large vessel called a zeng. The lower the layer, the deeper the date color, stained amber. Ordered, it is cut down through with a spatula and the rice and dates are stirred into a bowl. Soft, with the natural sweetness of dates opening slowly. Many stalls add no sugar. Best eaten warm as a morning sweet.

Zeng gao takes its name from the steaming vessel and has long been a morning food around Xi'an. The amount of dates and the hours of steaming decide the taste, its natural, sugar-free sweetness the charm. Many stalls close once sold out. Prices and hours are a guide, so check early on site.
