Piled in the bowl, it is topped with chili powder, scallion, and garlic, then hit with heated rapeseed oil that hisses the aroma up. Soy and vinegar are swirled in and mixed hard until the chili oil coats every strand. Thick and springy, with real chew. One noodle runs long, so lift and slurp it with chopsticks. No broth; heat and toastiness lead.

Oil-splashed noodles are a brothless dish rooted in Shaanxi homes, famous too for the fiendishly complex biang character. The scent at the moment the hot oil lands is the heart of it, and the quality of the rapeseed oil sways the taste. Heat and vinegar can often be tuned to taste.
