Why you must eat itThin-cut noodles are boiled in small portions and dressed with saozi, minced pork, tofu, wood ear, egg, and greens stir-fried together, in a red broth sharp with vinegar. The bowls are small, a bite or two of noodle each, and the local way is to slurp only the noodles and leave the broth. Sourness leads, heat and the fragrance of oil follow. The broth runs hot, the sour-spice warming you. There is an old custom of many refills, so order little by little to follow the shifts in taste.
Saozi noodles come from Qishan, a Shaanxi noodle of ceremony marked by sour broth and thin strands. An old style returned the broth to the pot; today most shops serve single portions.
