Why you must eat itTaiwanese "hongshao rou" — pork marinated in red yeast, battered and fried. The outside is reddish and crisp, the inside moist and faintly sweet. It's sliced thin, laid on a plate and eaten with a sweet miso dip. The signature is this paired with qie zai mian — boiled noodles topped with minced pork and scallion. Open only morning into midday, and the signature pork often sells out early. It's a narrow shop on the ground floor of an old merchant house, eaten fast at a shared table. For sides, point at the pork offal or eggs laid out front. A shop carrying the old taste of Dadaocheng.

Mai Mian Yan Zai (formally Jinquan Xiaochi) has run for decades near Dadaocheng's Yongle Market, a shop of qie zai mian and hongshao rou long loved by locals. The signature dishes sell out around midday, so morning is the sure time to come. Amid a Dihua Street gone touristy, it's a rare place still serving everyday local food. The shop is narrow and mostly shared tables, and you order by pointing at the dishes out front. Cash only. Plain and unadorned, it lets you taste the very air of a Taiwanese street canteen. Closing and sell-out times vary by day, so come early and confirm on the spot.
