Why you must eat itBroad beans boiled in salt, then simmered with star anise and licorice and dried. Hard enough that you crack the skin with your front teeth. The longer you chew, the more the salt and spice come out. Shanghainese who come to Yuyuan always buy a bag to take home — a taste unchanged in a century.
A Yuyuan specialty sold at the temple gate since the 1930s. The shop faces Fangbang Road and sells both loose and bagged. Alongside the beans sit other traditional Shanghai sweets. With the pear-syrup-candy shop, it is one of the old town's two signature souvenirs.
