Why you must eat itWheat dough twisted into two entwined strands, fried crisp and rolled in sugar. Crunchy outside, chewy within, with more bite than a doughnut. Fresh from the oil it is faintly warm, the sugar crackling. Some mix in glutinous rice flour for extra spring. Just right for a sweet breather after walking the market. One is cheap, so many buy a few and pick at them on the move. It keeps once cool, but nothing matches the fragrance straight from the oil.

Kkwabaegi is an old-style Korean fried sweet, a fixture of market flour-corners and bakeries. At Gwangjang it is sold at stalls beside hotteok and doughnuts. Rather than a famous shop, choose the cart frying them on the spot. In recent years a chewier version using glutinous rice flour has grown popular. Cash is the norm at stalls. Being cheap, it is a standard children's snack too. Centred on daytime to evening, and some stalls close early once sold out.
