Why you must eat itThin, somen-like noodles set into a clear broth drawn from dried anchovy and kelp. On top go shredded egg, chopped scallion, a little kimchi and Korean seaweed. Light, its salt gentle, it settles the body between the oily grazing of the market. The noodles are soft and slip down easily. A little of the chili powder or seasoning paste on the table gives the bowl a spine. Many stalls also offer thick hand-cut kalguksu, and either suits, depending on the day's mood.

Janchi guksu means "banquet noodles," once a plain dish served at celebrations. At Gwangjang it is served over the counter as everyday food for the people who work the market. Rather than one famous shop, eat at any of the eateries along the noodle row. Cheap and fast, with a solid portion. The market centres on daytime, some shops closing by evening. At a shared counter you slurp shoulder to shoulder with your neighbour. Cash is safest, though more shops now take cards.
