Why you must eat itSoaked mung beans ground on a stone mill, mixed with bean sprouts, kimchi and pork, and fried into a round in a generous pool of oil. On the big griddle before you, batter is spread one after another, the spit and smell of oil drifting into the aisle. Fresh off the heat, the edge is crisp and the centre soft and mealy. Dip it in soy with vinegar and chili, gnawing raw onion between bites. Order a bowl of makgeolli and the market-canteen scene is complete. One is plenty for two.

Bindaetteok is a mung-bean pancake and one of Gwangjang's signature plates. Sunhine Bindaetteok is known as one of the market's old hands, always with a crowd at the griddle. You can have it wrapped to take away. Many locals drink from midday over makgeolli or soju alongside it. The market centres on daytime, and some shops close early in the evening. Being heavy with oil, it grows heavier as it cools — eat it fresh, on the spot if you can. Cash is safest.
