Why you must eat itFresh from the fryer, the soy-milk donuts are light outside and, tofu-shop style, densely moist within. The soybean fragrance is plain and the sweetness restrained. Bite-sized, eaten from the bag as you walk. At the storefront they also pour cold soy milk by the cup, to wash the donuts down. Amid the Kuromon bustle you queue among locals buying tofu and ganmo. Eat one hot, first with nothing on it.

Takahashi Shokuhin, founded 1926, is an old shop making handmade tofu in Kuromon Market. Built around tofu curdled with domestic soybeans and natural nigari, it also lines up sesame tofu, egg tofu and fresh yuba. The storefront-fried soy-milk donuts and cups of thick soy milk are popular walk-and-eat items. With two shops in the market, it bustles with local shoppers from morning to evening.
