Why you must eat itA little shrimp paste made in Coloane — small shrimp salted and fermented — is fried hard with cold rice. The salt and ferment settle into every grain, while beaten egg, chopped spring onion and slivered pork pull it together. The smell is strong, but in the mouth it turns to a rounded savour and a faint sweetness that lingers. The paste is salty, so a little is enough, and the rice is best fried dry and loose. The island's workshops make the paste as a souvenir, and many carry a jar home. Add chilli or coriander to taste.
Shrimp paste is an old Coloane specialty; the village once had workshops that salted and fermented shrimp. Marked by a strong salt and ferment, it seasons stir-fries and steamed dishes as well as fried rice. Because it is salty, the amount used differs by shop.
