Why you must eat itFermented tofu dropped into hot oil. The smell is strong, but fried, the outside is firm and the inside light and airy — milder than you'd fear. Dressed with sweet sauce and chili sauce, eaten off a bamboo skewer. You smell the stall before you see it, so follow the scent.

Stinky tofu is a fermented, fried tofu found across southern China and Taiwan, a staple stall of the Temple Street night market too. The same cart often sells beef offal stew and fish balls alongside. Given a wide berth for its smell, but on a Hong Kong night walk it's a taste you pass at least once. Nearly all cash only.
