Why you must eat itBatter poured into an iron mould of hemispherical dimples, grilled on both sides over charcoal or a griddle. Fresh, the outside is crisp and the little balls inside are airy and hollow, sweet with the scent of egg. You tear it off one bead at a time. Matcha and chocolate versions have grown, but plain (yuan mei) shows the aroma best.

Egg waffle is said to have been born in post-war Hong Kong to use up cracked eggs. The way of holding the iron mould over the flame and flipping it by hand hasn't changed, and specialist windows dot the lanes of Mong Kok and Yau Ma Tei. The sound of grilling and the sweet smell are the sign; take it in a paper bag and eat as you walk.
