Why you must eat itThe skin is crisp and amber, a thin layer of fat beneath, moist red meat below that. Chopped on the bone and served with a dish of plum sauce. Over rice, the juices and sauce soak into the grains. Ask for the leg (bei) and the meat is thicker. It queues at lunch, but the chopping is quick.

A siu mei shop on Stanley Street, Central. A Michelin Bib Gourmand mention turned it into a queue, but it began as a place feeding market workers their lunch. In Hong Kong, "siu mei rice" — roast goose, char siu, soy chicken over rice or noodles — is everyday food, and the geese hung in the window are the sign.
