Why you must eat itSeveral teas are strained again and again through a cloth sack, the strong brew married to evaporated milk. The tannin and the creaminess run thick — the cup that carries a Hong Kong cha chaan teng's morning. Hot or over ice (dung). The classic pairing is with a pineapple bun or egg-topped instant noodles.
A Central cha chaan teng that began as a street stall in 1952. The cloth strainer, stained tea-brown until it looks like a stocking, gives "silk-stocking milk tea" its name, and this shop is credited with inventing it. In the cramped room and on folding seats out on the street, regulars and tourists drink shoulder to shoulder.
