Why you must eat itA cookie-dough shell baked around a custard so soft it wobbles. Fresh from the oven the shell crumbles at a touch and the centre is still warm and molten. Unlike the caramel-scorched Portuguese kind, the Hong Kong tart has a smooth, yellow face. Handed over wrapped one by one in paper.

Founded 1954, an old bakery on Lyndhurst Terrace. Known as a favourite of the last governor, Chris Patten, and ever since a byword for the egg tart. Tarts split into cookie-dough and puff-pastry camps; Tai Cheong stands for the cookie-dough kind. Catch a fresh batch and the rim of the shell is still toasty.
