Nagahama Squid Restaurant
×Live Squid Sashimi
Why you must eat itSquid from the Genkai Sea and nearby waters, dressed live and arranged as ikizukuri. The clear flesh has a firm bite, its sweetness spreading after. On the plate the legs may still move, the freshness itself the sight. Eaten with soy and wasabi, the remaining legs are fried, salt-grilled, or simmered to order. Squid changes in thickness and sweetness by kind and season, kensaki in summer and aori in winter each having their time. The closer the shop to the market, the more it handles the day's squid.
Live squid sashimi is a dish where freshness is everything, often served near the catch or the market. Squid comes in many kinds, differing in taste by season and origin. Because it uses live squid, on days without a landing it may drop from the menu. Prices are often per squid or at market rate, to be taken as a guide. Check the season and how the legs are cooked with the shop.
