The fried pieces crisp the bone-in flesh outside while it stays moist and springy within. Fugu soup simmers the white flesh and vegetables in a thin stock, plain yet drawing out savor. Winter is its season, the flesh firmer the colder it gets. Fugu is prepared only at licensed shops, so it is eaten where it is properly handled.

Fugu is a fish whose preparation needs a license, distributed mainly through Fukuoka and Shimonoseki. Sashimi is costly, but fried pieces, soup, and porridge can be tasted more cheaply.
