Why you must eat itFish paste shaped and steamed into kamaboko, or fried into satsuma-age, here called tempura, lines the counter. At the market front they sell them fresh from the oil one by one, eaten warm on your feet. Some hold burdock, squid, or onion, releasing the sweetness of the fish and the scent of the filling with a bite. Many buy them for oden or to go with drink. The smell of frying oil runs down the aisle, and the range makes you hesitate.
Nerimono are keeping foods made from fish paste, sold in many kinds at markets and specialists. Kamaboko is steamed and satsuma-age fried, with names and fillings differing by region. The fresh-fried ones especially do not keep. Prices are a guide per piece or weight; check keeping time and fillings with the shop.
