Yanagibashi Tamago Stand

×Dashimaki Tamago

Why you must eat itEgg batter carrying dashi is rolled in layers in a square pan. Cut, the section shows its folds, and in the mouth the stock spreads slowly. Some shops finish it sweet, others raise the dashi and hold back the salt. At the market a whole roll is cut and sold, eaten warm as is. The motion of cooking and the sound of turning the pan carry at the front, and shops that roll to order take a little wait.

Dashimaki tamago is a plain dish of egg and dashi, sold at markets, prepared-food shops, and sushi counters. Its sweetness and the depth of the dashi differ by shop, and taste varies by region. Fresh-cooked and cooled versions differ in texture. Prices are a guide per roll or slice; check whether it is made ahead or cooked to order with the shop.
