Why you must eat itWater dumplings of pure pork, dressed in chili oil and a sweet, garlicky soy (fuzhi jiangyou). The skins are thicker and chewier than chaoshou, the filling straight pork lifted with ginger. Unlike northern dumplings, the vinegar is restrained; sweetness, heat and garlic lead — the Chengdu way. About ten to a plate.

Zhong shuijiao is an old Chengdu snack born in the late Qing, a signature "famous Chengdu snack" alongside Long Chaoshou. The sweet-hot fuzhi soy is the deciding taste, hard to copy at home. Found at old shops around Kuanzhai and Chunxi Road, it suits ordering a little at a time with wontons and liangfen. The chewy skins make a few filling.
