×Fuqi feipian (cold sliced beef & offal)

Why you must eat itThin-sliced beef with tongue, tripe and tendon, blanched, cooled and tossed in a dressing of chili oil, Sichuan pepper, sesame and peanut. Red sauce clings to the thin slices, and numbness, heat and toasted sesame layer up. Once a humble dish of off-cuts, it holds no lung despite the "fei" in its name. Cold, and good with drink.

Fuqi feipian is said to be named for a 1930s Chengdu couple who sold it from carrying poles; today it is an emblematic Chengdu cold appetiser. An old shop on Zongfu Street is famous, but Kuanzhai and canteens serve it as a standard. Ordered first as a starter, it is a good gauge of the heat to come. The pepper's numbness is the Chengdu kind — gentle, aroma-forward.
