Long Chaoshou

Why you must eat itChaoshou — wontons of thin skin around pork — dressed in a sweet-and-hot sauce of chili oil, soy and sugar. Chengdu's hongyou is gentler in numbness than Chongqing's "laoma," leading instead with sweetness and fragrance. The skins are thin and slippery, the filling small. Non-spicy versions — clear broth, seafood — can be chosen too.

Long Chaoshou is an old Chengdu name, its flagship known on Chunxi Road. Built around wontons, it also serves dandan noodles, Zhong dumplings, liangfen and other Chengdu snacks, with a "sampler set" suited to travellers wanting a little of many. Reliable as an old house, but priced for tourists to match. A sit-down bowl around Kuanzhai.
