Why you must eat itBeef offal simmered for hours in miso, piled on rice and shovelled down as you break a sweat. From early morning the standing customers spill into the street, steam billowing off the great pot. Sweet, salty and deep — for some in the market, the day starts here. In winter it really lands.

A stewed-offal specialist in the outer market and one of its signature queues. It carries on a taste begun by the founder's grandfather, once a wooden-sandal maker. Besides the rice bowl, many just order the stew and slurp it standing. Closed Wednesdays and Sundays, and shut by early afternoon.
