Chicken rice is Singapore's national dish, carried over by migrants from Hainan Island. Tian Tian is known as the signature stall of Maxwell Food Centre, with locals and visitors alike in line. It looks utterly simple, but the whole craft sits in three things — how the bird is set, how the rice is cooked in fat, and the balance of ginger and chili.
