Why you must eat itA batter of rice and bean flour poured into a round mould, topped with small prawns, oysters and chopped scallion, capped with more batter and deep-fried. The disc that drops from the mould is hard and crisp at the rim, soft and oozing inside with oyster liquor. Pick up a fresh one and the toasted oil and the sea rise together; break it and white oyster and red prawn show. You can bite it walking, but it comes hot, so let it cool a little. A corner of Maxwell, fried to order, so wait a few minutes. An old Hokkien fried thing, now made by fewer and fewer shops.
The Fuzhou oyster cake came from Fuzhou in Fujian, and in Singapore it has long been a stall breakfast or snack. It is fiddly to make, so fewer shops do it, and this one at Maxwell is known locally as a rare survivor. The luck of the oysters and the freshness of the oil sway the taste, so come when turnover is quick. Fresh from the fryer is everything — the crust softens as it sits, so eat it soon if you carry it. Hours are a guide, and they may close once sold out.
