Guangmingcun (Huaihai Middle Rd)

×Fresh pork mooncake (xianrou yuebing)

Why you must eat itA savory mooncake: flaky layered pastry around a pork filling, baked crisp on an iron griddle. It has nothing to do with the sweet Cantonese kind, is eaten year round in Shanghai, and people queue at the window for a hot batch. The pastry shatters at a touch while the base, soaked with juice, stays moist. The filling is cleanly seasoned with ginger and soy. This old house on Huaihai Middle Road bakes day and night, the griddle visible through the glass. It is a walk up from Tianzifang or Ruijin No.2 Road; have each one wrapped in paper and eat it on the way back to the lanes.

Fresh pork mooncakes began as a Mid-Autumn item but settled into a year-round habit in Shanghai. Guangmingcun is a well-known old name on Huaihai Road, with long lines in mooncake season; even off-season the queue moves each time a batch comes out. They keep for a while, but hot from the griddle is best.
