What Ciqikou is

Ciqikou is an old town west of central Chongqing, on a cliff facing the Jialing River. Its history reaches back to the Song dynasty, and it was once a river wharf so prosperous it was called "Little Chongqing." Its name comes from the porcelain (ciqi) fired here and shipped out by boat. As a hinge where river and land cargo changed hands, it drew boatmen, porters and traders, and the canteens and snack shops that fed them gathered around — the old town's food today is what they left behind. Around the stone-paved Main Street, Ming-and-Qing timber houses climb the slope, and beneath the eaves the sound of frying mahua and the hot smell of giblets fill the air. Groomed now as a scenic spot, it is also the origin of dishes like maoxuewang, born at this wharf and carried across the whole of Chongqing.

The old town's taste — snacks born at the wharf

Ciqikou's food grew out of the lives of those who worked the river wharf. Its emblem is maoxuewang. Cheap duck blood and offal simmered in a hot broth, the dish was made to fill the porters who hauled the cargo, and in time became one of Chongqing's emblematic jianghu dishes. To eat that plate where it began is the worth of this old town. The other lead is Chen mahua — twisted, fried dough sticks in many flavours, from sweet honey to spicy mala, and, keeping well, a souvenir staple. Add the mould-griddled yundou gao, the douhua-and-rice meal, and cold bingfen, and these plain, cheap snacks line the Main Street. There is nothing flashy here, but the "layer close to the ground" of Chongqing's food remains.

How to walk this route

Start at Ciqikou station on Rail Transit Line 1. Walk from the station to the town gate (the paifang) and enter the stone-paved Main Street from there. First sample the freshly fried Chen mahua and choose your flavour. A little further on, the hot smell of frying giblets and the iron moulds griddling yundou gao come into view. To eat properly, order chicken giblets or the maoxuewang that began here, with rice. When the heat piles up, settle yourself with the gentle douhua rice meal and cool your mouth with bingfen. The Main Street is full of slopes and steps and drops toward the river, so once you reach the wharf, rest on the view of the Jialing. Reckon about ninety minutes on foot, mixing standing snacks with pots and rice you sit for. Weekends and holidays get very crowded, so for an unhurried look, aim for early morning. Hours change, so confirm on the spot.

1SnacksChen Mahua×Mahua (twisted fried dough)Wheat dough drawn thin, twisted together in several strands and fried crisp into a stick. It bites firm, snaps sharply and breaks apart in the mouth. Beyond sweet honey there are pepper-salt, mala and seaweed versions — and, true to Chongqing, a spicy mahua. It keeps well and resists going soft in the damp, so it is bought by the bag as a souvenir. Freshly fried samples, one stick at a time, are often out front.Nearest Ciqikou StnPrice 15–25 CNY a bag 2SweetsBingfen & Liangao Stall×Bingfen (chilled jelly in brown sugar)A chilled sweet of clear jelly — set with a plant-seed pectin — eaten in brown-sugar syrup. The jelly is soft and wobbly, breaking as you scoop it with a spoon. Most stalls pile on toasted peanuts, glutinous-rice balls, haw and dried fruit for a lively texture. Cold and faintly sweet, it cools a mouth worn down by heat. A bowl when you tire of walking the old town is the usual way to take it.Nearest Ciqikou StnPrice 8–14 CNY a bowl 3MeatAncient Town Chicken Giblets×Ciqikou chicken-giblet potChicken giblets — gizzard, liver, intestine — stir-fried in an iron pot with pickled chili and mustard-stem and fresh chili, then simmered at the table on a burner as you eat. The sourness of the pickles rides over the heat and clears the offal's edge. The crunch is the point, and it drives rice. As the meat thins, add vegetables, potato and noodles to cook on, just like hotpot. A pot for several — a Ciqikou specialty, with adjustable heat.Nearest Ciqikou StnPrice 48–78 CNY a pot 4MeatCiqikou Maoxuewang×Maoxuewang (spicy blood-curd stew)A plate built on xuewang — set duck blood with a pudding-like softness — with tripe, pork, tofu skin and mushrooms simmered in a scarlet broth of chili and Sichuan pepper. The blood curd is slippery, breaking apart as it soaks up the hot broth. Chili and fried garlic float on top; it looks fiercer than it is salty. Eaten with rice and shared among several. The heat and numbness run strong — you sweat.Nearest Ciqikou StnPrice 48–68 CNY a plate 5SweetsYundou Gao (griddle cake)×Yundou gao (rice-batter griddle cake)A batter of rice flour and a fermented starter poured into a special iron mould of round wells and griddled golden on both sides over charcoal — a small cake. Crisp and fragrant outside, light and fluffy within. Faintly sweet, with the fermented scent of rice wine (jiuniang) lingering. Best straight off the griddle, since it loses its texture cold, so eat it standing on the spot. In the old-town morning, cakes lifted one by one from the mould are a landmark in the lane.Nearest Ciqikou StnPrice 3–5 CNY each 6RiceDouhua Rice Meal×Douhua fan (soft tofu with rice)Just-set soft tofu (douhua), a bowl of white rice, and a dipping sauce (zhanshui) of chili oil, chili, Sichuan pepper and chopped scallion, served together. Scoop the tofu with a spoon, dip it in the sauce and eat it with the rice. The tofu itself is plain; the sauce's heat and the bean's sweetness come in turns. Cheap and filling — a canteen staple of Chongqing and Sichuan. You set the heat yourself by how much sauce you use.Nearest Ciqikou StnPrice 12–20 CNY a set
