×Bingfen (chilled jelly in brown sugar)

Why you must eat itA chilled sweet of clear jelly — set with a plant-seed pectin — eaten in brown-sugar syrup. The jelly is soft and wobbly, breaking as you scoop it with a spoon. Most stalls pile on toasted peanuts, glutinous-rice balls, haw and dried fruit for a lively texture. Cold and faintly sweet, it cools a mouth worn down by heat. A bowl when you tire of walking the old town is the usual way to take it.

Bingfen is a signature summer sweet of Sichuan and Chongqing, sold at stalls beside liangxia and liangao. Originally a home sweet set by hand-rubbing the pectin from seeds, it is still made fresh at shops that advertise as much. In a walking old town like Ciqikou it earns its place as a cold bowl between spicy specialties. You also often see it plated with liangao, a cold rice-cake sweet.
