Roll the sticky rice into a ball by hand and alternate the sour-hot salad with the fatty chicken. A classic Isaan (northeastern) pairing; the heat is set when you order.

Som tam, gai yang and sticky rice are the Isaan trio of Thailand's northeast. There is always a stall with this combination at the train market, the thud of the mortar marking it out. Adjust the heat with "mai phet" (not spicy) or "phet nit noi" (a little spicy). Cheap and easy to share.
