Why you must eat itEach bowl is small, the broth thickened dark with pork or beef blood. Empty bowls are stacked as you go, and the count is read from the pile. One bowl is never enough, so four or five is the usual way. Vinegar, chilli and sugar on the table let you pull it toward your own strength.
The noodles were once sold from boats on the canals, and the bowls are said to have been made small so they would not spill as the boat rocked. A few shops sit around Thonglor, where locals stack their bowls at lunch. Most open from morning to late afternoon.
