Why you must eat itOkinawa's distilled spirit, brewed from Thai rice and black koji. Cut with water or ice, sometimes with a squeeze of shikuwasa. Kusu, aged three years or more, is mellow with deeper aroma. It is strong, so drink it slowly over ice. Many Sakaemachi shops offer a "senbero," about three drinks for a thousand yen, and this is the first glass.
Awamori is a distilled spirit made by breweries across Okinawa, each brand its own taste. The longer-aged kusu is prized higher. Senbero, a few drinks and a snack for around a thousand yen, is an Okinawan way of drinking, and Sakaemachi is one of its centres. Prices and hours are a guide, so check on site.
