Why you must eat itSeveral tea leaves blended and boiled, then strained again and again through a fine cloth bag. The stain dyes the bag like a silk stocking, and gives the drink its name. Strong, tannic tea meets evaporated milk, and the astringency, sweetness and smoothness come into balance. Hot or iced, taken with a butter-filled bun for a pause — a cha chaan teng staple.
The cha chaan teng is Hong Kong's own diner, Western and Chinese blended, serving milk tea, buns, rice and noodles from morning to night. Silk-stocking tea is its emblem, each shop blending its leaves differently so the flavour shows character. Even in a busy quarter like Causeway Bay, old ice cafés remain, where locals drop in between errands.
